Living in an oil boom town, no one has family around, which means you celebrate with friends. Among my “tuesday play group” group of girlfriends we have sort of made it a tradition to celebrate with this copycat recipe for Trader Joe’s Chicken Salad. At first we all called it “Becky’s Chicken Salad”, until she shared the recipe and now it’s just “That AMAZING chicken salad recipe”.
This means that every birthday you can find about 10 girls chatting, laughing, crying, and “doing life” together while raving over this delicious chicken salad. It’s a meal that can be made sort of fancy, or slapped on a piece of bread and fed to your kids.
It’s one of those recipes that everyone loves and is always a hit. It’s also great because when served on lettuce it’s a delicious gluten free meal. I make it using the meat from rotisserie chickens, because it’s simple and delicious, but you could make it with any type of shredded chicken.
Copycat Trader Joe’s Wine Country Chicken Salad

- 2 c mayonaise
- 4 T. apple cider vinegar
- 2 T. honey
- 8 t, sugar
- 1 t. poppy seeds
- Salt and Black Pepper to taste
- 2 rotisserie chickens- shredded
- 2 c. chopped celery
- 1 1/2 cups Craisins
- *Optional* 1 1/2 c. pecan halves
- Combine Mayo, Vinegar, Honey, Sugar, Salt and Poppy Seeds
- Add Chicken, Celery, Craisins and Pecans
- Mix Until Coated
- Serve on lettuce or Croissant Rolls
